The day starts early in the coastal village of Elmina. Already a hive of activity, before the sun has made its above the horizon, it is only after the fishing boats return that true chaos begin. Boats jostle for space, as their captains wait impatiently to unload their cargo of fish. Traders argue over the price and quality of the catch. Within a few short hours, the fish are already being sold in the vast street markets of Ghana’s capital, Accra, and beyond.
